coarsely chop 1 garlic clove and mix in 1 tsp of salt to make a paste
In a small saucepan, combine 2 cups of water, 1 small minced shallot,sprig of thyme and the garlic paste and bring to a boil.
Pour the liquid over 1 1/2 cup of bulgar wheat. stir it then cover it and let it stand until all the bulgar has absorbed the liquid and is tender (about 40 minutes)
Disgard the thyme sprig and stir in1/4 cup fresh lemon juice, 2 Tablespoons of extra virgin olive oil, 2 tablespoons of the following: chopped fresh chives, fresh mint, cilanto. Season with a pinch of kosher salt & black pepper.
Serve at room temperature or chilled Makes 4 servings.
